Bread Done Right

I truly LOVE bread.

There is nothing better than fresh baked bread smothered in salty butter and eaten warm on the spot. Modern day breads have become truly denatured. The practices that were used 100’s of years ago to create nutritious breads have fallen by the wayside for the sake of time. We are a fast food nation and most people do not want to take the time to make things the right way. 

What is the right way? Grains should be sprouted or fermented to prepare the grain for proper digestion. It is so much easier for our bodies to digest fermented and sprouted grains. It does take time to do this however and that why I don’t make my own bread!

Some easy ways to buy sprouted and fermented breads:

Sourdough Bread 
It should list a sourdough starter in the ingredients. You can sometimes even find real sourdough at mainstream grocery stores. Just read the ingredients or if in doubt, call the company. Here is an example of what the ingredients would say (this is taken from The Acme Bread Company’s sourdough bread):
Organic unbleached wheat flour, water, sea salt,sour starter, sea salt, and malted barley flour
What is sourdough anyway? Sourdough is bread that is made by a long fermentation of dough using naturally occuring lactobacilli and yeasts. A starter is made with flour and water. This mixture is allowed to sit for a few days to ferment and then is used to create bread. You keep a small amount in a jar and just keep adding flour and water to it. Eventually you have a “starter” that you can use for anything from pancakes to bread or muffins. Some starters that are used in commercial brands claim to be over a hundred years old, it is called a “mother dough”. 

Sprouted Grain Bread
This bread is made by soaking wheat berries overnight in water, draining them and then allowing them to sprout. They end up with little tails and it usually take a few days. By doing this, you release so many more nutrients and again allow for better digestion. You then grind them along with other ingredients to make your flour and then your bread. 
An example of the ingredients on the back of sprouted bread (from Food For Life 7 Sprouted Grains Bread): Organic Sprouted Wheat, Filtered Water, Organic Malted Barley, Organic Sprouted Rye, Organic Sprouted Barley, Organic Sprouted Oats, Organic Sprouted Millet, Organic Sprouted Corn, Organic Sprouted Brown Rice, Fresh Yeast, Organic Wheat Gluten, Sea Salt.
Most of you have heard of the brand
Ezekiel, which is made by the same company. 

These breads still do contain gluten, so if you are avoiding it, they are not for you.

If you have never visited the SanFrancisco Ferry Building, you are in for a real treat. It’s amazing enough on regular days, but when the farmers market is going on Saturday morning (8-2pm) it’s a most spectacular place. There are vendors selling everything from fruits and vegetables to pastured meat to sea salt & olive oil to freshly baked bread, gourmet cheese and freshly ground almond butter. Make sure that you arrive hungry, as there are so many options for an amazing breakfast, brunch or lunch. And the coffee..Oh my. Blue Bottle Cappuccino anyone? TO DIE FOR.
Some of my favorite vendors:
A famous coffee roaster named after Central Europe’s first coffee house established in 1683, Blue Bottle founder James Freeman promises, “I will only sell coffee less than 48 hours out of the roaster to my customers, so they may enjoy coffee at it’s peak of flavor. I will only use the finest organic, and pesticide free, shade grown beans.”
There will ALWAYS be a line at this place, but it is very worth it. They use organic Clover Stornetta milk, which is awesome ( I do wish they would switch to Straus non-homogenized milk). There are usually about three stands scattered throughout the market as well, with shorter lines.
Cowgirl Creamery Artisan Cheese is a full-service, European style cheese shop. Sue Conley and Peggy Smith feature cheeses made at their two creameries in Point Reyes Station and Petaluma — made with organic milk from Straus Family Creamery and Chileno Valley Jersey Dairy. I think triple cream Brie might be my favorite cheese.
This cheese is AMAZING, it’s perfectly creamy and delectable. That’s all I can say. The Best. You must find it and consume it. My favorites are Red Hawk and Mt. Tam.
Excellent simplified Mexican food overlooking the bay with amazing guacamole and chips (my favorite food group). Brain child of famous chef Traci Des Jardins from Jardinière, the food is fresh and flavorful. Try the carnitas tacos or the chilaquiles on the weekend. 
For us meat eaters, this is paradise. With sustainably farmed and humanely raised animals as well as organic produce, you can feel better about yourself while consuming a burger smothered with caramelized onions, sharp cheddar cheese, avocado and bacon. What? I like a loaded burger okay? Meatloaf sandwiches, meatballs, pulled pork, BBQ beef, tallow fries are some of the other gluttonous items you can find there.
I have yet to try everything at the ferry building yet, but those are some of my standouts. You can visit these restaurants every day of the week. If you are headed to the farmers market on Saturday, I would suggest getting there before 10:30 as it gets really packed.

A sustainable & humane, pastured centered farm located in the beautiful Point Reyes hills. Those happy California cow commercials you see on TV is what Marin Sun Farms looks like.
They sell pastured beef, goat, lamb, turkey and pork products, pastured chickens and ducks, and chicken and duck eggs.
